Ingredients for Kimchi Fitters

  • 3/4 cup of scallion (onion)
  • 2 teaspoon of finely grated garlic
  • 1/2 teaspoon toasted sesame oil
  • 1 teaspoon soy sauce
  • 1/3 cup of ground pork
  • 1 cup dried peeled split yellow mung beans, soaked for 3 hours or up to overnight
  • 1 1/2 cups chopped cabbage Kimchi (12 ounces), squeeze out the excess liquid
  • 1 red or green chili thinly sliced
  • Salt to taste
  • Vegetable oil

Before starting to make the fitters you need to marinate and keep the ground pork at a side. To prepare the marinating: Take a big bowl and put 1/3 cup of ground pork, add 1 teaspoon of finely grated garlic, 1/2 teaspoon toasted sesame oil, 1 teaspoon soy sauce mix all the ingredients well and keep it aside to chill for 30 minutes or for a day.

The second method is:

In a blender put 1 1/2 cups soaked split yellow mung beans along with soaking liquid and blend it. Add more tablespoons of water if necessary. Blend it until you get a thick, slightly chunky paste. Make sure not to make it flowing freely paste.

After blending it now transfer the paste to a large bowl and start adding the remaining ingredients in it that are: 1 teaspoon of finely grated garlic, 1 1/2 cups chopped cabbage Kimchi (remember to squeeze out the excess liquid from it), 1 red or green chili thinly sliced, season the batter with salt to taste and mix it well. Now bring out the marinated ground pork and mix this into the bean batter gracefully.

And the last step is:

Preheat the vegetable oil in one of the Stone Frying Pans over medium-high heat. Take a long handle spoon and head of a small cup size. Take a full spoon of batter and spread out in a circular motion for three to four rounds. If needed, you can add more oil between batches.
